In order to revitalize the area of Jiyugaoka, I believe it is important to strengthen the connections between residents.
Therefore, we aim to expand the community by utilizing the existing community created by Chef Tsujiguchi and creating a space where residents can actively participate.
However, communities are difficult to maintain, and if not maintained, they will decline.
Therefore, we wanted to create emotional value and encourage customers to continue purchasing the product.
As students, we provide the entry point and create an environment where anyone can easily participate.

Kuromitsu-hime, a brand food of Hodatsushimi-cho in the Oshimizu district of Ishikawa Prefecture, is used as an ingredient. Kuromitsu-hime is a difficult plant to cultivate because its branches grow vigorously and do not bear much fruit. Therefore, if you apply fertilizer without thinking, you will end up with almost no fruit. The amount of fertilizer must be adjusted according to the climate and rainfall of the year. Unlike ordinary figs, they are rich in nectar, with a sugar content of more than 20 degrees Celsius and a soft pulp with a sticky texture.
Fig pastry and crème chantilly are piled on top of the well baked puff pastry. The finishing touch is a luxurious garnish of black figs.
We hope that through this sweet, Chef Tsujiguchi's community will increase and the connection between the residents of Jiyugaoka will be further deepened.
┃Thoughts on Princess Kuromitsu
We decided to use ingredients from Noto, a region with which Chef Tsujiguchi is very familiar, to contribute to the reconstruction of the region. In the Noto Peninsula, there is a fantastic black fig that only a limited number of producers can grow. Unlike ordinary figs, they are very attractive because of their high sugar content and sticky texture. Chef Tsujiguchi has taken these rare black figs and made them into something even more special by not only making them into sweets, but by further modifying them into sweets. Kuromitsu-hime” is a product of our desire to spread the charm of the Noto Peninsula and to contribute to the revitalization of the region. Princess Kuromitsu is also very valuable and important for the expansion of Chef Tsujiguchi's community and the development of the city of Jiyugaoka. We believe that through this sweet, Chef Tsujiguchi's community will increase and connections will deepen, bringing together people who love the town of Jiyugaoka!

Cream puffs made with Kuromitsu-hime, a rare black fig produced in Ishikawa Prefecture, which is called “black diamond” due to its high sugar content. The puff pastry is well baked, layered with fig custard cream and smooth whipped cream, and decorated with black figs to finish.
The black figs, the main ingredient in the cream puffs, come from the Noto Peninsula, which is also a disaster-stricken area. In order to keep the disaster from fading away and to let people know more about Noto, we developed these sweets using Noto ingredients together with the students of SANNO University's “Sweets Promotion” course.

Vitamin C is one of the most popular vitamins good for beauty, and prevents blemishes and dullness. Dietary fiber improves the intestinal environment, and iron is an ingredient that women who tend to be deficient in iron should be especially conscious of taking. Potassium helps prevent edema.
Furthermore, black figs contain more anthocyanin, a type of polyphenol, as a black pigment than ordinary figs, and thus have a stronger antioxidant effect. They provide delicious support for beauty and health.
